Recipe for Vegan German Dumplings

Ladies and Gentlemen, here we go with another recipe! I know, it sounds like I am the grand master of recipes 🙂 Even though, this might only be my second or third recipe that I post. I am not even sure anymore. But I just have to post this one. I posted a picture of these vegan dumplings on my Instagram account, which by the way, you find here: 😉

This picture was quite well received and many of my lovely Instagram followers asked me for the recipe. So, here we go.

I have to start with a little story. From time to time, I get invited for dinner by my wonderful colleagues at work. And some time ago, we had german dumplings called Semmelknödel or Knössel in German. The reason being, is that one of my colleagues, Klaus, is German. Therefore, he invited us to try his Knödel. I have to admit, I also tried a piece of them although they were clearly not vegan and they were delicious. So, one day at lunch, Klaus told me: “You know what, we should try a vegan version of Knödel”. And so we did!

I will actually show you the original recipe that I got from Klaus and just show you what we used as supplements (in red). The recipe is designed to make enough Semmelknödel for 6 people. I also have to say that we just used the recipe as kind of a guideline. The actual cooking was freestyle. Yeaaahh that’s right…that’s how I roll folks 😀 Enough of kidding around…here you go:

1 1/2 tsp. Butter         –> Vegan Margarine
3 Eggs           –> Arche VegEgg (see picture below)
4 1/2 tbsp. Flour
3/4 l Milk            –> Almond milk
1 1/2 pinch Nutmeg
1 1/2 bunch Parsley
1 1/2 pinch Pepper
1 1/2 pinch Salt
3/4 kg Bread          –> without milk or eggs
1 1/2 pc. Onions

This is the basic recipe for the vegan dumplings. However, we have also added some leaf spinach but left out the flour. And of course, with the vegan dumplings, you need a loooooooot of sauce. We basically just fried some onions and mushrooms, added lots of soy milk and used various spices until it tasted just wonderful 🙂 Namely, some salt and pepper, nutmeg, curcuma, chili and very importantly some margarine at the end to refine the sauce.

You might ask yourself, what you are supposed to do with this list of ingredients. You just mix all the ingredients in one bowl and form little balls. Then boil them in hot salted water. Simple, isn’t it?
